Indian Taj opened its doors on the Passeig Marítim in Cala Millor in 2015 — run like a family, not a business, from day one. For a decade, guests have returned, often with the same table, the same bottle, the same ember in the tandoor.

The tandoor is not an oven — it's a colleague. 400 °C, charcoal-fed, patient between services. What leaves it carries a smoke note no kitchen below 400 °C can replicate.
